Simple Garlic Roasted Potatoes
Hot potato. The trick with roasting potatoes that I’ve FINALLY figured out is the oven temperature. It’s gotta be HOT. 450 degrees F to be exact.
2 medium russet potatoes, or 4 medium red potatoes, cut into 1 inch cubes
2 tbsp olive oil
1 teaspoon of salt
1/2 teaspoon cracked black pepper
Preheat the oven to 450 degrees F. Wash, dry and cut your potatoes and then evenly spread them over a large rimmed baking sheet lined with parchment paper.
Drizzle the olive oil over the potatoes. In the rimmed baking sheet, stir the potatoes around to get all the surfaces of each potato piece covered and then separate them on the sheet as evenly as possible. Evenly sprinkle the salt and pepper over the potatoes.
Bake the potatoes for 20 minutes, stopping to turn at about 12 minutes in.
Serve warm and enjoy!
