Green Greek Salad with Flavorful Falafel

Ingredients for Greek salad:

  • 2 cups romaine, chopped

  • 2 cups green kale, de-spined and chopped

  • 1/2 cup, halved and sliced cucumber

  • 1 green bell pepper, chopped

  • 1/4-1/2 cup pitted kalamata olives

  • 1/4 medium red onion, sliced thin

  • 1 tsp lemon juice

Ingredients for Flavorful Falafel:

  • 1 15oz can chickpeas (garbanzo beans)

  • 3 cup fresh parsley, chopped

  • 4 cloves garlic, minced

  • 2 medium shallots, minced

  • 2 tbsp raw sesame seeds

  • 1 tsp cumin

  • 1/2 tsp cayenne

  • 1/2 tsp salt 

  • 1/2 tsp pepper

  • 1/4 tsp cardamom (optional)

  • 1/4 tsp coriander (optional)

  • 3 tbsp all-purpose flour (or sub for gluten-free flour)

  • 3-4 tbsp avocado oil for cooking 

  • 1/4 cup bread crumbs 

Ingredients for Tahini Garlic Dill dressing:

  • 1/3 cup tahini

  • 3 cloves minced garlic

  • Juice of 1/2 medium lemon

  • 1 tsp dried dill

  • 1/2 tsp salt

  • 2-3 tbsp unsweetened almond milk to thin


  1. Follow the directions to make the Flavorful Falafel and Tahini Garlic Dill Dressing here.

  2. Add the kale to a large mixing or salad bowl. Pour the lemon juice over the kale and massage the lemon juice into the kale by squeezing the leaves in your hands until the leaves feel a bit more relaxed. Add the romaine to the mix and toss. Split the salad greens into large salad bowls or plates.

  3. Split the cucumber slices, bell pepper, red onions and kalamata olives evenly into each serving dish. Place 3 warm falafel pieces onto each salad and drizzle the tahini garlic dill dressing generously over the top. If using pre-made falafel, warm in the oven for 5 minutes in the oven at 350 degrees F.

  4. Enjoy immediately. If storing, wait to add any of the toppings until ready to serve.
