4 Healthy Recipes for BBQs, Potlucks & Camping
Summertime is all about the backyard BBQs, potlucks, and camping trips and I'm always looking for fresh dishes to bring. One thing I've learned over the years and shared with clients is that you don't have to sacrifice taste for healthier options. Just the other day I found myself sending the same email with the same recipes, so I decided to share with everyone with a post! Here are some of my favorite go-tos from my favorite recipe sites:
Cucumber, Tomato and Feta Salad from Epicurious - This one is SO refreshing! I have added garbanzo beans in the past to add some protein.
Fruit Salad with Mint & Balsamic from Cookie & Kate - A great spin on a traditional fruit salad with fresh basil or mint. I've had both and can't decide which I like more. You can trade out certain fruits like white nectarines for the peaches, adding in grapefruit pieces, etc.
Sugar Snap Pea Salad from Veggie Inspired- I normally snack on sugar snap peas a a finger food, but this is a great way to create a healthier pea salad without the mayo. I've also seen asian inspired versions of this like this one here using sesame oil, toasted sesame seeds, and red pepper flakes.
Vegan Potato Salad from Minimalist Baker - I never liked potato salad until I had vegan potato salad. I do think my taste buds have changed a bit since eating a vegan diet, but I think in this case it's due to better ingredients like the cashew-based sauce and spicy mustard. The only thing I add is sliced black olives!
